Newlywed in the Kitchen Recipe #17: Pioneer Woman's Sour Cream Noodle Bake

This recipe was recommended to me by Super Friend, who is a phenomenal cook and she found it from Pioneer Woman, who never leads me astray, so I knew that we had to try it!  This is a great one to add to your list of easy, hearty, week-night options.

Pioneer Woman's Sour Cream Noodle Bake

1 1/4 pound ground beef
1 can (15 oz.) tomato sauce
1/2 t salt  (Per Super Mom's advice, I added extra of all the spices in this recipe)
Freshly ground black pepper
8 oz egg noodles
1/2 cup sour cream
1 1/4 C cottage cheese
1/2 C green onions  (I don't like onions, so I used parsley instead.  Not 1/2 a cup, but numerous good shakes)
1 C grated sharp cheddar cheese  (I always cheat and use more cheese.  This is why I'm chubby.)

Preheat oven to 350.

Brown beef in skillet and drain fat.  Add tomato sauce, salt, and pepper.  Stir and simmer while you prepare other ingredients.  

Cook noodles, drain, set aside.

In medium bowl, combine sour cream, cottage cheese, more pepper, parsley/onions, and noodles.  Stir.

To assemble, add half the noodles to a baking dish.  Top with half the meat mixture.  Sprinkle half the cheese.  Then repeat with another layer of noodles, meat, and cheese.

Bake for 20 minutes until cheese is melted.

Mmm, sounds tasty.

This would be a good one to make in advance and freeze to heat up later. That could be handy in September/October when you're a bit occupied and don't want to cook.... :)
