Newlywed in the Kitchen Recipe #21: Grilled Chicken Salad

I don't know about ya'll, but I struggle with eating in the summer.  It's hot, I'm not that hungry, I don't want something heavy.  So last weekend when The Boy from Texas grilled burgers and corn for dinner one night, I had him throw on a couple of chicken breasts that I could use for lunches this week.

I decided to whip up a basic chicken salad for sandwiches.  It was seriously super easy, took no time, and was absolutely delicious.

The Boy from Texas Comments:  I like mayonnaise.  I don't really like chicken.  I'll pass.

Grilled Chicken Salad

- Grilled chicken breast (I had really thin sliced ones and used about 1 per serving)
- Mayonnaise
- Mustard
- Hard boiled egg
- Sliced grapes
- Sliced apple 
- Pepper

(You could pretty much add or take out anything you wanted....next time I may add some dried cranberries and pecans.  If you like celery and/or onions they'd go well too.)

*One warning....I didn't measure anything, just eyeballed it.  So good luck there.*

Put grilled chicken breast in food chopper/processor and grind.  Add mayo and mustard and mix.  Add hard boiled egg, grapes, apple and mix.  You may want to add more mayo/mustard at this point.  Top with pepper.  Cool before serving.

Mmm-hmm, this looks easy and tasty! I love chicken salad, and one of the things I love about it is what you said - it is so versatile and can contain whatever ingredients you like!
